1. SKAI
The floor-to-ceiling windows at SKAI offer panoramic views of Singapore, from the ports and seas to the glistening cityscape. A mix of Japanese and Scandinavian design influences, the interior is chic yet understated. It’s cosy in the daytime with floods of natural light, and a glitzy spot for dinner and drinks once the sun goes down!
Their menu is infused with contemporary Japanese accents, using staple ingredients and effortlessly marrying the cooking techniques of both Western and Oriental cuisines. Make sure to get the Crispy Rye Noodles ($35), flavoured with wild mushrooms, shaved truffles and an onsen egg. This scrumptious vegetarian option is a modern reinvention of sang mee (生面), aka crispy egg noodles that are a kopitiam favourite.
If you have the cash to splash, we highly recommend getting the superbly tender Loch Fyne Smoked Salmon Fillet ($64) and the Australian Wylarah Wagyu ($120). The latter is a 250g New York strip with a stellar “MB8” beef grading level, giving it a highly marbled melt-in-your-mouth texture. Their extensive selection of artisanal beef sourced from Australia, America, Japan and even Ireland will no doubt delight any true-blue carnivore.
SKAI also has an attractive set lunch menu, with tantalising dishes such as Yellow Fin Tuna, Iberico Secreto – which is a “secret butcher’s cut” from the Iberico pig – and an aromatic Earl Grey Parfait for dessert. At $39 for 2 courses and $45 for 3, it’s quite a steal and definitely a great way to #TreatYourself.

Indulge in good food and amazing views at SKAI
The views at SKAI are grand, but the food executed by their head chef Paul Hallett is just as spectacular.
Everything is made using the freshest quality ingredients, such as the Heirloom Tomatoes with Burrata and Fried Bread ($22). The tri-coloured medley of tomatoes were sweet and tangy, perfectly pairing with the rich and creamy mozzarella.
Their desserts are also awe-inspiring, such as this artistic plate of Yuzu White Chocolate ($22). Crack the adorable balls open to reveal a fragrant blend of yuzu curd and custard, a light citrus flavour dancing on your tongue along with lychee compote dotted on the chocolate “tree”.
If your sweet tooth is craving something extravagant, order the Caramelised Soy Bean Cheesecake ($22). Torched table-side for a crackling, browned sugar layer, it’s served with a delicate array of petite components: citrus jelly, lemon sorbet and edible pumpkin shards.
Completed with a dash of miso fudge, it’s unbelievably soft and creamy. A dream come true for any cheesecake lover!
Apart from the restaurant, SKAI also has a bar area for you to take the edge off while gazing into the gorgeous scenery.
The cocktails ($25 each) are inspired by various states of elevation, with themes of Sea, Rainforest, High Desert and Alpine. We sampled the unique and photogenic Camu Camu (Peruvian pisco brandy, soursop, hibiscus, lime, and the camu camu fruit) as well as the Nori Highball (Laphroaig 10 year whiskey, manzanilla sherry, ace apple cider plus a sheet of seaweed), concocted with elements of the rainforest and ocean respectively.
With good food, exotic drinks, chill vibes and amazing views, SKAI ticks all the boxes to make for the ultimate evening out with the ones who matter most. Perched on the 70th storey of The Swissotel Stamford, you’re treated to unparalleled views of the entire cityscape. Whip out your camera, hold your lover close, and take in the magnificent grandeur that Singapore has to offer!
