Weekends are made for spoiling ourselves, and that’s exactly what we plan on doing. Here are 14 lavish brunch buffets at Singapore’s hotels that certainly don’t scrimp on the fresh seafood spreads and tender meat carvings – all you have to do is grab a plate, and keep going back for seconds.

When we head over to a buffet, we’re determined to get our money’s worth. So when you’re at Basilico, there’s every reason to make return trips to their dedicated foie gras counter. The foie gras is pan-seared on the spot, so you can expect it to be crisp on the outside but buttery soft as your teeth sink in.

But before you fill up on the foie gras, take a little of everything. There are 50 hard and soft Italian cheeses including generous shares of buffalo mozzarella and burrata cheese, chilled seafood like fresh lobster and crabs, as well as a carving station with roasted turkey and lamb. 

The dessert table is just as crowded with a variety of cakes, mousse, and tarts, so you’ll be ending off brunch on a sweet note.

Parkroyal on Pickering is one of the CBD’s most recognisable building with greenery spilling everywhere, but with its restaurant Lime, now you’ve got all the more reason to head down. Sample their fresh Fine de Claire Oysters, Maine Lobsters, and King Crab during your Sunday brunch here.

This brunch will definitely outdo all others with their generous serves of fresh lobster meat, found in dishes such as their 65 Degree Sous-vide Egg with Lobster and Lobster Hokkien Noodles

Bar & Billiard Room’s Sunday champagne brunch is filled with a spread of seafood and tender roasts worth getting out of bed for. Fill your plate with their uni shells crammed with crabmeat, caviar and uni, as well as their fresh seafood on ice – Boston lobsters, prawns and freshly-shucked oysters.

If that’s too much seafood for you, there’s also plenty of Sunday roast to go around: pork ribs, beef tenderloin, duck breast, and lamb. It also comes with free-flow alcohol, including the famous Singapore Sling which was invented in this very bar.

We’ve got a winner here with InterContinental Singapore’s Ash & Elm, especially when they’ve got a caviar bar dishing out various types of caviar from around the world. Varieties include: Kaluga Queen, Avruga, Ebiko, Ikura, and Tobiko.

While they’ve got a fresh seafood spread – which comes with fresh lobsters and oysters –  they’ve also got an a la carte menu of tasting platters. These tasting platters are part of the buffet and made-to-order, so you can order as many as you can chow down. Some choices include pan-seared scallops and pan-fried duck foie gras on brioche. 

For those who are after conventional breakfast dishes, there are also Eggs Benedict and Eggs En Cocotte (baked eggs). Champagne comes free-flow, as do Bloody Mary Cocktails, so knock yourself out.

Having a buffet brunch at Brasserie Les Saveurs isn’t anything like your typical brunch affair. It starts with a complimentary hour of aperitifs at the Astor Bar from 11AM to 12PM, where you can pick out a cocktail or two. While this restaurant has a massive display of seafood on ice – Boston lobsters, langoustines, oysters, and clams – it also does justice to its savoury, cooked dishes.

You’re certainly welcome to walk around to admire the buffet spread, but there’ll also be dishes that are “passed-around”, meaning that the waiter will come around to your table to serve up bites like French Scallop Carpaccio and Yellowfin Tuna Confit. But wait up, you’ve also got a choice to make for your main – this place goes all out and offers a buffet and main course.

Choose from mains like Beef Striploin or Pan-roasted Duck Breast. And we’re not even at the desserts yet. The dessert table is an elegant set-up, featuring flutes with swirled cream and berry-topped tarts. There’ll be live jazz performances every Sunday too.

At Beach Road Kitchen, the seafood – both smoked and fresh – get their very own temperature-controlled room. Try the Seared Tuna Tataki or fleshy Canadian lobsters. The freshly-shucked French Oysters are also worth another trip back.

Other dishes worth trying are their wood-fired pizzas, and plates from their charcoal grill section – choose from meats like Iberico pork and short ribs or seafood like prawns and squid.  For dessert, there are profiteroles filled with cream, a live waffle and crepe station, and a range of classic ice-cream flavours.

Pan Pacific Singapore’s Edge has a Sunday brunch that puts out plenty of live stations, so the food you’re served promises to be freshly-made and piping-hot. Try their seafood too: it comes with Canadian oysters and snow crab legs, along with a tangy scallop ceviche.

Make a point to try their Whole Baby Lamb Taco Station – the meat is carved upon request and slotted in a crisp tortilla shell, mixed with tomato salsa and other veggies. Make your way down to the seaside at Sentosa where Kwee Zeen lies. This particular restaurant offers up a mix of French fare and Pan-Asian specialties, so you can eat a large range of dishes from Veal Blanquette (veal stew) to Katong Laksa.

They also offer up seafood from all over the world. For crab alone, they’ve got flower crab from Indonesia, brown crab from Holland, mud crab from Indonesia, and dungeness crab from the US.

Their other live stations include a range of local food like satay and popiah, as well as grilled foods like Tom Yum Grilled Fish. Their delicatessen counter offers a solid selection of salads, cold cuts, and freshly-baked breads but the seafood spread with oysters and Maine lobsters is what goes best with cocktails.
