Dipped in standards. :(
When I was younger, whenever my family felt like having porridge we would troop down to Ah Chiang’s to have a bowl of hearty porridge.
My order would always be their Pork Ball porridge, which sees smooth cantonese porridge hugging pork balls. I always lapped up all the porridge first, leaving the pork balls all at the bottom, before pouring soya sauce over them and eating it as a separate dish. Mmmm, so good. Other notable mentions include their raw fish, which is essentially raw fish swimming in sesame oil and soya sauce, piled high with chives, ginger, and chilli. Think of it as chinese sashimi, if you will.
Unfortunately, in recent years their standards seem to have dipped. The last few times I visited, the porridge was smooth but had lost the unique taste that placed them a cut above the rest. From what I heard, they have since changed to using stoves instead of charcoal to save time, that could be a contributing factor to the drop in quality.
