In his words, the essence of Japanese cuisine lies in ‘enjoying nature’s blessing by bringing out each ingredient’s best flavour’, while presenting them in an understated yet elegant style. Ingredients are picked from the best in Japan and flown in thrice every week, ensuring premium quality, optimal freshness and often bringing rare and seasonal catches that even restaurants in Japan may not offer. Due to the surprising nature of each ingredient, it calls for Chef Koe’s creative expertise on the “Omakase” style courses.
