The best French Onion Soup
A conversation with the owner of Vis-a-Vis reveals why this place serves one of the best French onion soups in Singapore.
His secret: onions, lots of it, lovingly (and really slowly) sauteed to perfection. From what I can remember it takes a good 2 hours of continuous stirring over low heat to extract as much flavour as possible from the onions. Next beef stock is added to the onions and slow boiled to perfection.
The owner is also very knowledgable and passionate about French cuisine (which is actually lacking in more places than you'd expect) and even offers wine & dine tours around France where he personally brings guests to the best vineyards and restaurants in the country.
Side note: other than the soup, nothing much that's terribly memorable.
